Creating consistent, cost-effective, quality products is our top goal at Brewster Cheese. To achieve that, we employ a dedicated workforce and continue to embrace the newest technologies in the cheese-making field.

We’re proud to say that the efforts at our manufacturing facilities have made Brewster Cheese the largest producer of Swiss cheese in the United States. 

State-of-the-Art-Facilities

We now operate across three state-of-the-art facilities:

Brewster, OH

It all started with our Brewster facility. Our state-of-the-art facility here employs about 180 people and is able to cut and package more than 200,000 pounds of cheese each day.

In addition to cheese, our whey processing division here turns the cheese-making by-product into whey protein and lactose powders.

Our Quality Control department in Brewster also tests all of our milk, cheese and whey as they enter and leave our facility in order to ensure that Brewster Cheese produces only the highest quality products.

Stockton, IL

Our second production plant was added in Stockton, Ill. in 1998. This plant employs about 100 people and strictly produces Swiss cheese.

The whey processing division of Brewster Cheese turns the cheese-making by-product into condensed whey solids at the Stockton location. The whey produced in this facility specifically is sold as a concentrate and is used as an ingredient in other food products.

We test all of our milk, cheese and whey products—both inbound and outbound—in our Quality Control department to ensure we always produce the highest quality products.

Rupert, ID

The Rupert, ID facility was purchased in 2007 and currently employs about 80 people.

The focus in Rupert is on Swiss cheese production for manufacturing as well as a calf feed replacer process. The whey produced from our Rupert plant is processed into a milk replacer for feeding calves.

Quality is important to Brewster Cheese, and we test all of our milk, cheese and whey products as they enter and leave our facility each day. This step in our Quality Control department ensures we always produce the highest quality products.
