Our Cheese

No one loves Swiss cheese as much as we do here at Brewster Cheese. We’re the number one manufacturer of Swiss cheese in the United States, and have been producing cheese since 1965.

  1. Reduced Fat Swiss Cheese

    Shiny and yellow in color with eyes (holes) between the size of a dime and a nickel with a sweet and nutty, mellow flavor.

    Our low fat swiss. Not as shiny with a slightly paler color with eyes (holes) between the size of a dime and a nickel. A slightly drier cheese with a milder sweet and nutty flavor

    Shiny and slightly darker yellow in color with eyes (holes) between the size of a dime and a nickel. This cheese has been aged longer to develop a slightly stronger sweet and nutty flavor.

    Ivory to pale yellow. Slightly smaller eyes (holes) with a buttery, slightly sweet and nutty flavor.

    Ivory to pale yellow. Many more smaller eyes (holes) similar to a piece of lace fabric. Slightly stronger sweet and nutty flavor.
