Just like a fine wine, Swiss cheese gets stronger with age. Aged Swiss is kept in a cool environment for an extended period of time, allowing the flavor to develop further. This allows the cheese to have a deeper yellow color and a sharper flavor than the original Swiss. The signature “eyes” remain the same in Aged Swiss as in the original or reduced-fat Swiss varieties.
